Shaved Brussels Sprout Salad (RECIPE)

Ingredients

  • Brussels Sprouts- 1 pound. Shaved or shredded.
  • Onion- 1 small red. Thinly slice the onions.
  • Radish- 1-3 sliced as desired
  • Sprouts- ½ cup. (Optional.)
  • Dried Fruit- ⅓ cup
  • Vinaigrette Dressing- ½ to 1 cup as needed.
  • Nuts- ⅓ cup.
  • 1 medium cucumber, sliced and quartered
  • 4 ounces feta cheese, crumbled or cut into 1/2 inch cubes


Instructions

  • 1. Prepare the brussels sprouts as indicated, shredding or shaving them. Then transfer the sprouts to a large bowl (or refrigerate them for up to two days in a sealed bag or air tight container).


  • 2. Place the onion and radish into the large bowl with the brussels sprouts and give the ingredients a quick toss. You can add the optional sprouts as well. Then add the dried fruit.


  • 3. Whisk the dressing until well blended and the drizzle about half of it over the salad. Toss the salad and then add additional dressing as needed.


  • 4. Cover and refrigerate the salad for 20 minutes up to an hour.


  • 5. Add the nuts to the bowl, give the ingredients a quick toss and serve. You can add cheese if desired.
