This quick and easy one sheet pan pesto salmon and veggies is a proper nutritious and delicious meal.

Sheet Pan Salmon with Vegetables (RECIPE)

Ingredients

  • 1½ pound wild salmon cut in individual portions
  • 12 oz (340.19 grams) green beans, cleaned and trimmed
  • 12 oz (340.19 grams) grape tomatoes
  • 3 potatoes cut in wedges
  • ¼ cup extra virgin olive oil
  • pepper to taste


Pesto Sauce



Instructions

  • 1. Preheat your oven at 370F (187.78 degrees Celsius)
  • 2. In a sheet pan place the green beans and potatoes and drizzle with the olive oil and pepper
  • 3. Cook until fork tender (Around 35 min)
  • 4. In the meantime, prepare your pesto. Add all the ingredients in a blender and blend until smooth
  • 5. When potatoes and green beans are fork tender, place the salmon pieces and cherry tomatoes in the sheet pan
  • 6. Brush generously the pesto on top of salmon and veggies
  • 7. Cook for 12-15 min or until salmon is cooked through
  • 8. Drizzle with a squeeze of lemon and serve.
