Strapatsada (RECIPE)

This is a Greek recipe — actually, strictly speaking, it's Italian, or of Italian derivation: strapazzare meaning, in the context of eggs, "to scramble". And really that's what this is: eggs scrambled with tomatoes.

Strapatsada (RECIPE)

Ingredients

  • 2 eggs
  • ¼ cup of crumbled feta plus extra for garnish
  • 1 clove of garlic minced
  • 1 roasted red pepper chopped (optional)
  • 50g feta cheese, crumbled
  • 1 large meaty tomato
  • ¼ tsp of oregano
  • 1 tsp extra virgin olive oil (Kasadrinos **FREE Bottle**)
  • Fresh basil to garnish
  • Salt and pepper to taste


Instructions

  • 1. In a small bowl beat the eggs and in a separate one crumble the feta and set each aside.


  • 2. Heat a medium sized frying pan to medium heat and add the tomatoes, roasted red peppers if using and garlic along with the oregano.


  • 3. Stir and continue to cook for a couple of minutes until heated through and all of the moisture has evaporated.


  • 4. Drizzle in the olive oil and stir for another minute and then add the beaten eggs.


  • 5. Whisk the eggs until barely set, remembering they will keep cooking even after, and remove pan from heat.


  • 6. Off the heat add in the feta and stir a bit to incorporate the feta throughout.


  • 7. Once done serve immediately.
