Zucchini Noodle Pasta (RECIPE)

A refreshing blend of zucchini, red onion, and a simple vinaigrette makes this summer zucchini noodle salad perfect for hot days!

Zucchini Noodle Pasta (RECIPE)

Ingredients

  • 2 medium sized zucchini
  • ½ cup red onion sliced very thin
  • 3 Tablespoons extra virgin olive oil (Kasadrinos **FREE Bottle**)
  • 2 Tablespoons apple cider vinegar
  • ½ Tablespoon Italian seasoning
  • 1 teaspoon maple syrup
  • ¼ teaspoon salt
  • 1 cup sliced grape or cherry tomatoes


Instructions

  • 1. Whisk together the olive oil, apple cider vinegar, Italian seasoning, maple syrup, and salt in a large bowl and set aside.


  • 2. Use your spiralizer to make zucchini noodles.


  • 3. Add the zucchini noodles and red onion to the dressing and toss to coat.


  • 4. Serve immediately or store in the refrigerator.
